Ginisang Tahong Recipe

Ginisang tahong or sauteed mussels is just one of the many ways on how to cook tahong or mussels.
In Ilocos Region, we usually saute it with garlic, onion, tomato and ginger. We do not add water because the tahong itself produces liguid/soup as you cook it. Since the sabaw (soup) comes from the tahong while cooking, the sabaw is very tasty. The other best way to cook fresh tahong is by grilling it. There is no need to add any spices to it since the fresh tahong itself is already very tasty. As for me, I usually dip it calamansi extract or lemon extract with minced onion. O minsan, pinipigaan ko ng calamansi, the same way when I eat grilled oyster or talaba.
Ingredients:
2 Tbsp olive oil
2 Cloves garlic
1 Small red onions
1 Thumb size ginger crushed and sliced
2 Pc tomatoes (diced)
1 Cup water
1 Kg mussels(cleaned & rubbed)
Pepper to taste
1 Tbsp fish sauce
3 Green chillies
Some greens such as kangkong or chillie leaves
Instructions:
1. Heat sauce pan with olive oil, saute garlic, onion, ginger and tomatoes for 2-3 mins.
2. Add mussels and cover with a lid and simmer for 3-5 mins or until they are opened.
3. Add water, seasoned with salt & pepper, chillies and some greens.
4. Serve hot!
