Lechon Paksiw With Sprite Recipe



Paksiw is a term associated to a dish that is cooked with vinegar and garlic. Lechon Paksiw is a Filipino pork dish made from leftover roast pig which is known as “Lechon”. Aside from using roast pig, leftover Lechon kawali can also be used.Making this dish is a practical way to recycle leftover pork. Instead of reheating the same dish over and over, making paksiw out of it makes the pork more flavorful bringing more life to the ingredient.

The secret to a good Lechon paksiw lies on the Lechon sauce used. Since the sauce is one of the main sources of the dish’s flavor, having a good one will surely increase your success rate. Ingredients:
½ Kg Leftover lechon, cut into serving pieces
1Pc Laurel leaf
1 Pc star anise
½ Cup vinegar
1 Pc onion cut into quarter
4 Cloves garlic crushed
¼ Cup soy sauce
¼ Cup water
1 Small can Del Monte Pineapple Chunks
1 Bottle Sprite/7 Up (8oz)
Salt & pepper to taste.

Instruction:
1. In a small sauce pan, saute garlic until golden browm. Add the onion together with the leftover lechon. Let it cook for 5 mins under medium heat or just until the fat lechon release its oil.
2. Add the vinegar, soy sauce and water, laurel leaf and star of anice and bring to a boil.
3. Pour the Sprite and Del Monte Pineapple Chunks. Simmer for about 10 mins.
4. Add salt and pepper as desired. Note: If you wish to have a lot of sauce on your Lechon Paksiw add more Sprite. Adding water on it will spoil your paksiw quickly.
